Chocolate, Banana and Coffee Cake

2 large eggs

2 very ripe large bananas, mashed

100g caster sugar

1 tsp vanilla extract

1 tsp cinnamon

25mls of coffee from instant or ground, cooled

150g plain flour

75g ground almonds

1 tsp baking powder

Heaped tablespoon of cocoa powder sieved

150mls of olive oil

Method

Preheat the oven to 180oC (160oC Fan) or gas mark 4

Grease and line a square cake tin approximately 23cm square

Beat the eggs mashed banana and sugar together. Add the vanilla extract, cinnamon and coffee, mix well. Add the flour, cocoa, almonds baking powder and olive oil and stir until evenly combined.

Bake for 35 to 45 minutes until the cake is spongy on top and a skewer comes out clean.

Decorate with melted chocolate.
